Wheat is not the bully! Fresh Milled Flour to the rescue.

Did you know that whole grain wheat is a nutritional powerhouse, containing 40 of the 44 essential nutrients necessary for human life? It provides 90% of required nutrients, including B vitamins, Vitamin E, iron, magnesium, and potassium. Freshly milled whole wheat retains these nutrients, whereas commercial milling strips them.


Where did it all go wrong?

​What is the flour on the store shelves?  

Wheat has come along way since it was a whole food, full of nutrition.  It's now shrouded in medical and health blame. Gluten. Wheat. Illness. Weight.

From the time of taking wheat berries to the community mill to be ground into flour to what we find on the shelves and in the bread/pasteries we buy.  Modern flour, a convenience, a shelf stable flour.  No need to refrigerate, no need to worry about bugs, yes, no interest from bugs!

Modern flour; manipulated with chemicals to produce white, fluffy and quickly dried to allow for faster processing and turn around.

Modern flour is not Modern Wheat

Modern flour is NOT the same as modern wheat.  Let’s take a look at how we find our flour on the shelf, all nice, white and pristine…


What is modern flour?

It starts with glyphosate to dry out the wheat to ramp up flour production. 


The wheat berries then get milled and sifted removing the bran and wheat germ, say good-bye to all the nutrients.  Since people were getting very ill from the missing nutrients, the FDA mandated they add them back in.  So they 'enriched' the flour with synthetic nutrients that our bodies can't digest or absorb.

To improve the aesthetics, the flour gets bleached in chlorine gas, mmmmm!

Lastly to get it to rise better, they added a carcinogen called potassium bromate.

There we have it modern flour, highly processed and plenty of chemicals.  

Our society loves to dissect issues at the micro level, not the macro so an illness comes up and they blame it on wheat/bread, what's in the bread they ask, gluten.  So gluten is the scapegoat for lack of nutrients, synthetic nutrients, chlorine gas, potassium bromate and glyphosate.  ​

So many people are now milling their own flour from wheat berries bought from conscious farmers who know organic and regenerative practices are the way forward for peoples health and the planet.
